Cable and plain do not shrink the same
A cable pulls the knit in as it forms; a flat panel does not. Putting them next to each other in one jumper means every panel has to be knitted to a different width so they all come out the same size on the seam. It is arithmetic, done before anything is made.

Every join between two panels in this jumper is a colour change and a texture change at the same time, which means the machine stops twice where a plain jumper would not stop at all. That is the whole cost, and it is all in time rather than in yarn.
