A placket is the only structure on a pullover
There is no zip and no full button front to hold the neck in shape, so a short placket carries the whole opening on its own. Facing it in a firmer material stops the neckline stretching every time the top goes over a head.

Why it costs what it costs
A patchwork of rectangles has to line up at the side seam and at the shoulder, or the whole grid reads as a mistake rather than a pattern. It is the same problem as matching a check on a jacket, and it is solved the same way: by cutting slowly and wasting cloth.
